The aquaculture team of the University of Florence is a multicultural group featuring high-level profiles lead by the full professor Giuliana Parisi. Our work mainly focuses on fish welfare and sustainable aquaculture through the investigation on diet formulation, farming conditions, stunning/killing methods, handling (as storage and processing) and valorization of discard fish and fish by-products. | Our goal is to support the aquaculture sector trying to find a compromise between farmers’ needs, animal welfare, environment protection, and consumer health; for this reason, our targeted analyses concern both stress and performance indexes as well as marketable and quality traits.
